Shimeji mushrooms are an Asian mushroom with a crunchy texture and a nutty, salty flavor. They have small rounded caps and long, slender stems that grow from an interconnected base. In nature, they often grow on dead or rotting beech trees. Shimeji mushrooms have a crunchy texture and a salty, nutty, umami flavor due to their high concentration of naturally occurring amino acids known as glutamates, very similar to foods like Parmesan cheese and anchovies. They are tough and bitter when raw, but cooking softens them and removes the bitterness. They are often served in stir-fries, in soups, and as a side dish with roasted meats. They are also popular ingredients in casseroles, rice and noodle dishes, and tempura dishes, as well as in omelets, casseroles, and sauces. It is one of the mushrooms that can be grown in culture medium.
